Gluten Free Almond Blueberry Waffles

These waffles are light and crispy on the outside and packed with nutrients, antioxidants and protein!  This is one of our favourite 'special' breakfasts in our house - it makes the house smell good and everyone loves a good waffle with some butter and maple syrup to start off a beautiful Saturday morning! 

Gluten Free Almond Blueberry Waffles


1 cup gluten free flour
1 cup almond meal
1 tbs raw sugar (you can omit this or use some stevia)
4 ts baking powder
1/4 ts salt
1 ts vanilla extract
2 eggs
1 cup almond milk (or preferred choice)
1/2 cup extra virgin olive oil (or preferred choice)
1/3 cup blueberries


* Mix all the dry ingredients together in one bowl and the wet ingredients in a separate bowl
* Add wet to dry ingredients and stir well
* Cook in a waffle iron until just golden brown
* Enjoy!
