Energy Bars

I have a simple and tasty recipe to make energy bars.  I don't know about you, but I see the muesli bars in the supermarket and I look at the Nutrition Facts as well as ingredient list and I sigh.  They are usually laden with sugars, hydrogenated oils, colours and more that aren't meant for our bodies, or littles ones bodies, to process.  However, I like a quick sweet something sometimes after dinner, or right before a workout.  I make several different bars, but I've been loving this one lately.  Here's the full recipe, and all you need is a blender and an oven. 

80 g pitted dates

30 g pumpkin seeds

100 g rolled oats

40 g desicated coconut

1 ripe banana

1/2 tsp ground cinnamon

pinch of sea salt

I like to double this recipe so I get 12 bars, but you could use the amounts listed above that make approximately 6 bars.  Mix all the ingredients together until well chopped and then press firmly into a bar mould, or a square tin pan.  Bake for 20 minutes on 180 or until the edges are slightly brown.  If you've used a tin, then cut into desired bars and allow to cool before refrigerating.
